For the first time the conference “System Catering of the Future”, took place on September 12th and 13th in Munich. Delegate was also represented as platinum partner at the new event.

About 80 participants followed the exciting presentations of start-up concepts as well as of established system caterers and discussed challenges, experiences and goals of the industry.

Topics such as growth through franchising, food trends from other countries, efficient employee recruitment and retaining existing employees were also highlighted.

Highlight was the dinner at the L´Osteria Schwanthalerhöhe. In addition to pizza, pasta and cool drinks, there was an insight behind the scenes of the kitchen and organization. The participants used their time to get to know each other and to actively exchange ideas.

On the second day, Eric Gliemmo (Head of IT at Vapiano) and Yann Gourdin (Junior Expert Processes & Applications at Vapiano) talked about the use of Delegate as a central system for purchasing, production, sales, inventory and controlling.


The implementation of inventory management system has reduced food costs by 1.5% per location, a significant saving for over 230 restaurants, according to Eric Gliemmo, Head of IT at Vapiano.

Enormous time savings and employee relief through the specific use of mobile devices have been achieved within the inventory process. Where it used to take half a day, the restaurant staff are now ready in 30 minutes.

Thanks to intelligent recipe management, production losses can now be calculated. The seamless process from purchasing through production to sales now makes shrinkage, spoilage and food waste traceable and reducible.

Gourdin and Gliemmo named the continuous exchange and close cooperation of the IT and operations teams as the most important points in the successful implementation and operation of an inventory management system – The operations team know the processes in the stores and the IT teams are aware of the possibilities of the software. This ensures optimal cooperation between people and IT systems.

Together with our partners editelZucchetti with the product TCPOS we were able to present a round package from the POS system over the electronic data interchange (EDI) up to the inventory management system.
